Great Work Week Meals: The 8 Minute Vegan Stir Fry

Work from home offers a unique opportunity to eat healthy - but time is still an issue. With a little thought and planning, you can make fast meals at home that are excellent for your glowing skin, not to mention your brain game and overall health.

This dish is lightning fast to make during your work week. It takes a few minutes to prep and about 8 minutes to cook - you can even multi-task and check your email while you're cooking. 

Ingredients:
Sliced shallots
Crushed garlic
Avocado Oil
Organic Spinach, Spring Mix or other greens
Raw Hemp Seeds
Sprouted Pumpkin Seeds
Pink Himalayan Sea Salt
Bragg’s Liquid Aminos

Cooking Directions
Sauté shallots in avocado oil till fragrant and slightly carmelized.
Add garlic, continue cooking till fragrant.
Turn the heat up and quickly stir fry the greens.

Garnish with raw Hemp Seeds, sprouted Pumpkin Seeds, Pink Himalayan Sea Salt and a dash of Bragg’s Liquid Aminos. If you're not familiar with Bragg's, a little goes a long way and it is lower in sodium than soy sauce.
